Zucchini Soup

Easy and delicious!

This couldn't be easier, healthier or more delicious!
1/2 small onion
2 cloves garlic
3 medium zucchini
32 oz reduced sodium Swanson chicken broth (or vegetable)
2 tbsp reduced fat sour cream
kosher salt and black pepper
Put the onion, garlic and zucchini in a pot. Cover with broth and bring to a boil for until vegetables are cooked. Put into a blender! And you have soup. I like to add a little salt and pepper. You can add some sour cream, yogurt or half and half for a creamier texture.
